I see that Oxford have brought out a Scammell Scarab BRS Parcels in green livery. Would that be appropriate for a late-50s/early sixties BR(S) layout?

I seem to remember them around and still in use in the late 1950's if that's any help.

Hi Keith,
If you visit their website and click on 1950s that vehicle is shown there so I would definitely say 'yes' to your question.

The thing that puzzles me a bit is that I read somewhere that the Scarabs stayed in blood & custard livery. Could it be that those were for other BR services, i.e. not BR Parcels?

British roads service parcels were in green from late 40's to at least late 60's.Atleast one Scarab is preserved in these colours

Yep, it will be fine, though personally I prefer the blood & custard job... but I think that's influenced by a mate of mine acquiring an Airfix one and painting it that way when we were kids.
