Does a Dapol guidance sheet regarding the fitting the details exist, please? 

Not sure, but it's pretty simple - unscrew the crank pin on each rear wheel (it'll either be a hex bolt or a philips screw on the early locos) - then you can winkle on the new tyre under the rod to fit it. Easier to just do than describe, though a blunt flat bladed screwdriver is my tool of choice to assist in pressing the tyre along the circumference of the wheel and get it to go over into the groove.
