Due to a requirement to store a certain length of train in my fiddle/stock yard, I need to use 2 double slips - 1 at each incoming end - on my layout which is code 80 Peco.
Other than the height difference which will need packing, should I expect any problems?
I have a variety of locos (all steam) including some early Poole Farish, Union Mills, Minitrix and Dapol.

I have 4 of these on Ummagumma Junction and don't have any problems. Some report that they have problems with the ride height going across the frogs though. I think the most important thing is to make sure they are perfectly flat and level with the tracks adjoining them. Mine are insulfrog and I don't have an issue with short wheelbase locos either. I used two or three double and single slips on my latest project. I have noticed the flangeways aren't as deep as some of the older code 55 pointwork, some of my older Arnold and Minitrix locos grounded on them and lost pickup although they are fine on the other pointwork. I've actually gouged out the bottom of the flangeways a little and that's cured the problem.

I'll be honest I'd rather not mix code 55 and code 80 on scenic trackwork, they do look different. As well as the packing underneath be prepared for a slight step in the rail height when you join them together. I'd advise NOT to file the rail head; tapping with a block of wood and a hammer should deform the rail joiner enough to remove the step.
As @Trainfish (https://www.ngaugeforum.co.uk/SMFN/index.php?action=profile;u=262) says make sure that they are dead flat and level to the adjoining track.
I've got a single slip on my layout and locos didn't like it until I'd relayed it properly.
