is Piping hot?

Quite a few ready meals and similar state "Make sure food is Piping Hot"

Can anybody give some idea of the temperature range that can be classed as piping hot? Will it burn your tongue? Is it near boiling? Why "piping"? Various google results suggesting sound of steam escaping, or Scottish tradition of main course being brought to table to the accompaniment of a piper.

Googling seems to provide a few different values between about 60 and 80 degrees C, with qualifiers like "not served below", or "core temperature" or "if being reheated".

76 degrees C is the "correct" core temperature - At least according to my friend who is a commercial cook.

I think this is one of those words that as time and etymology has changed it...

Basically, it should be "Pi" "pi" "Ng"

so Pi, is 3.142....
and Ng is the Chemical Symbol of Norwegium, which has an Atomic Number of 72...

so basically Pi Pi Ng hot, is around 710.6 degrees, the only thing that is unsure, is what unit of temperature this is measured in, but is believed to be Rankine (°R) 710.6, which converts to Celsius    121.63 °C.

According to the food standards agency,  Hot food MUST be kept above 63 degrees Centigrade -  so I guess this is hot enough.

If it's a microwave desert type food then I thought it had to be microwaved until the filling was hotter than molten lava?

That is ok for keeping food hot, but to cook it initially, it should reach 76.

Bacteria grows best around the 30s temp....which sadly is the lower end of the ideal range for washing ones hands....

Don't you just hate it when piping hot food like melted cheese sticks to the roof of your mouth and burns the bejabers out of it?   :D ;)

Anyone out there remember the "Apple Pie" sold at KFC (I think).  Actually contained molten lava cunningly disguised with a bit of cinnamon.

How many poor kids mouths were burnt by eating 'Pop Tarts' and those awful Birds Eye pieces of potato piped inside with tomato ketchup (sorry, their commercial name escapes me)?

Not sure but I think piping hot refers back to the times when cooks used to put a small piece of clay pipe in the centre of pies to help support the pastry ( my Nan used to use china egg cups), when steam could be seen coming out of the pipe, the pie was deemed "piping hot"
