Title: Baked apple - gourmet style

After reading an old farmhouse recipe book #I decided to treat myself to a nice baked Bramley, stufed with chopped dried apricot and brown sugar  and basted with sherry, however not having any sherry I used West Country Mead, what a difference, I shall folloow up by trying  mead to sweeten cooked fruit more often

Looks like I'll have to restock, only 3 bottles left!

I've not tried the West  country version but Lindisfarne Mead is pretty good stuff . You do have to watch the tide if you nip across to buy some othewise it could be a long shopping trip. http://www.lindisfarne-mead.co.uk/ (http://www.lindisfarne-mead.co.uk/)

My wife is from Newcastle, and there are two things it's important to bring back on trips - Lindisfarne Mead and Stotties.

How much do you hollow out of the apple? Just core it or really gouge out the insides to fit more boozy fruit in?

I've got a corer that takes out a chunk about an inch in diameter, I usually give that a good twisting to make the hole a bit bigger round,but not by too much, I also try and stop before I reach the bottom cos otherwise the fruit/sugar/mead mix falls out!

Thanks Ninoz, but I find a lot of the mead available here to be artificially sweet. Maybe the bees are healthier and stronger!  :). Cheers, Bill.
