Our dog 'Blue' quite likes beef jerky, but what I want to know is, how do people know it tastes like "sweaty sandal sole" and, being aware of that fact, why do they eat sweaty sandal sole?

I love biltong.

In English we would call it "beef jerky", in the US pemmican.

No! Don't let a South African hear you say that. Believe me, I know from experience. From memory jerky is air dried on racks while biltong is hung to dry. I can't remember the rest and I'm scared to ask him

I believe 1 is hung vertically and 1 is laid flat but I may be wrong. This would also explain the difference in chewiness or texture I suppose. I think also the air drying is forced a bit like a hair drier. As I said, I'm not asking him again
