For 'Black Magic Woman' it has to be Santana for me every time.
I find Dylan a bit like 'Marmite'. I tend to like him overall but some is pretty dire.
His 'Tweeter and the Monkey Man' on the 'Travelling Wilburys' is a wonder both musically and lyrically.
Biryani Ferret's (thanks to Charles Shaar Murray of the NME for that) album 'Dylanesque' varies from excellent to awful dependent on the track

I prefer Neil Young's version of "Four Strong Winds" to the original.

Also, I prefer UB40's versions of "Kingston Town", "Red, Red Wine" and "Impossible Love" to the originals.
