Best looking diesel from anywhere is the Alco PA in my opinion. I have an A and B units in SF warbonnet colours - spectacular. The EMD E8 looks pretty good too, but the more slanty nose E6 looks better. Here is one finished in Southern Railway colours.

But, my favourite diesel is the EMD SD40-2 followed by the SD40. In real life these locos were very successful and they look terrific as models too. I have 6 Kato versions of these. Two them are painted the two tone green of the British Columbia Railway and look very nice.

SD40-2s are nice, and the 2 tone BC Rail ones especially.

But as we're on slanty nosed Es allow me to add mine 😄

I'd call them handsome rather than beautiful. One certainly can't accuse them of simply being boxes on wheels.

Trent, I'm sure that we'll let you sneak the electrics in. After all, American diesels are really diesel electrics with the diesel providing on board electrical power generation to run DC or AC traction motors. Great photo of the NYC electric by the way.

it could be a taste for US diesels that keeps me in N as opposed to  2mm scale

For me, the Ffestiniog Railway's 60cm gauge Baldwin 'Moelwyn'. Built as an 0-4-0 gas-mechanical for service in the First World War, and now with a Gardner diesel engine and front pony truck to smooth the ride on the Ffestiniog and Welsh Highland railways. It has a special place in my heart, as many years ago it spent a night on a lorry outside my parents' house in Bradford, and the day after I joined my Dad in the lorry deliviering it to Rotherham where it was going to be restored seemingly in someone's garden shed! Always nice to catch up with it on visits to Wales. One day I'll model it, but probably not in N scale...
